DEEP-FRIED REUBEN BALLS

This is the next best thing to a Reuben Sandwich!

1 can corned beef

1 can sauerkraut (drained and chopped)                                         

4 oz. cream cheese                                                                          

1/4 cup bread crumbs                                                                     

1/2 cup shredded swiss cheese

Flour, 1 small can evaporated milk and bread crumbs

Combine corned beef, sauerkraut, cream cheese, bread crumbs, and swiss cheese.  Form into small balls (walnut-sized).  Roll in flour, then evaporated milk, then bread crumbs.  Let them set for a short time to dry then refrigerate for an about an hour.  Deep fry until golden brown - a couple of minutes.  

(These can be frozen before deep-frying for later use.)   

 

SIMPLE REUBEN SPREAD 

Combine the following ingredients:

1 can corned beef

1 can sauerkraut (drained & chopped)

8 oz. cream cheese

1 cup shredded swiss cheese

Serving suggestions:

  • Serve with assorted crackers.
  • Cut a hole out of the middle of a loaf of round rye bread and put the spread in the middle.
  • Form into a cheese ball and roll in a mixture of bread crumbs and parmesan cheese.
